This delicious dish, reminiscent of Spanish cuisine, is a perfect side dish, easy to make, and it can be as flavorful, complex and spicy as you wish it to be!
You will need:
1 pound dried black beans
4 large plum tomatoes, chopped
2 cups corn kernels
1/2 red onion, chopped
1 bunch cilantro, chopped
1/2 cup lime juice
1/4 cup olive oil or vegetable oil
1. Fill large pot with cold water; put in beans. Bring to a boil. Remove from heat, cover, and let sit for 1 hour. Drain beans, add fresh water, bring to boil and simmer for 1 hour until beans are tender. Drain.
2. In serving bowl, toss chopped tomatoes with salt and set aside for 10-15 minutes so juices are brought out.
3. Add beans, corn, onion, and mix well.
4. Add cilantro, lime juice and oil. Stir so everything is well-coated. Season with salt, pepper and cayenne to taste.
Serve immediately, or wait for half an hour for flavors to intensify.
